Queen's Bush Spinach Salad

While I'm off on maternity leave, I've been missing the spinach salad that I order when I go out to the local pub for lunch with my work friends. I couldn't think of a good reason not to make it for myself at home, though, since it's a simple and delicious meal or side dish. Add some sliced grilled chicken if you like. I entered quantities for one serving, but it's easy to upsize. Making your own bacon bits and dressing is great, but it's also delicious with storebought! (Cooking time is the time to hard boil the egg!)
Ingredients:
1 cup baby spinach leaves
1/8 cup red onion, sliced
2 tablespoons cheddar cheese or 2 tablespoons monterey jack cheese, shredded
1 egg, hard boiled and sliced
2 tablespoons bacon bits
6 -8 cherry tomatoes or 6 -8 grape tomatoes
1 tablespoon kraft calorie-wise creamy poppyseed dressing
Directions:
1. On a plate or bowl of baby spinach leaves, scatter onions, tomatoes, bacon bits, and cheese.
2. Top with egg slices and drizzle with dressing.
3. Enjoy!
