Quebec Salmon Pie

Ingredients:

  • 1 (15 1/2 oz) can salmon
  • 2 1/2-3 cups mashed potatoes
  • 1/2 cup finely chopped onion
  • 3 tbsp butter
  • 1/2 tsp salt
  • 1/4 tsp savory
  • 1 pinch pepper

Directions:

  1. Grease individual casseroles or a nine-inch deep pie plate.
  2. Preheat the oven to 400°F.
  3. Drain, flake and crush bones from can of salmon.
  4. Bones are loaded with calcium and should never be discarded.
  5. Combine potatoes and all other ingredients except salmon.
  6. Place half the potato mixture in bottom of prepared casseroles or pie plate.
  7. Cover with salmon.
  8. Top with remaining potato mixture.
  9. Prepare sufficient pastry, roll out and cover casserole or pie plate.
  10. Cut vents for steam to escape.
  11. Bake in 400 F oven for 25 to 30 minutes or until bubbly hot and crust is golden brown.
  12. Hint: Serve with chili sauce or chutney.
