Purple Potato Salad

Ingredients:

  • 4 large carrots
  • 6 eggs
  • 2 lemons , juice of
  • 1/2 tsp salt
  • 1/3 cup mayonnaise
  • 2 tsp relish

Directions:

  1. Boil potatoes, carrots, celery, and eggs on stove top until potatoes are tender.
  2. Peel & cut carrots, celery, eggs and potatoes
  3. In large mixing bowl add all ingredients, salt to taste, I prefer less salt & mayonaise.
  4. Serve while warm.
