Purple Mountain Sweet Potato Purée

This is a basic recipe that can be consumed as it is or to use on other culinary creations. I am thinking of making a pie out of this mash. It looks so pretty ;) These sweet potatoes taste very good and not as sweet as regular sweet potatoes, that is a plus for me! Read more !
Ingredients:
3 pounds purple mountain sweet potatoes
pinch of salt and pepper
2 tbsp cream
1/4 tsp grated nutmeg
Directions:
1. Preheat the oven to 375F.
2. Wash the potatoes. See Photo
3. Pierce the skins with a fork to help the cooking.
4. Wrap each potato with kitchen foil. Place them in a baking tray and into the oven for 45 minutes.
5. Let the potatoes cool. When they are cooled enough to handle, skin them and put the potatoes on a bowl.
6. Add the seasoning and cream, stir well. You might want to add butter, I skipped that because I found my potatoes humid enough.
7. Ready to serve or use to other purposes.
