Pumpkin With Black Beans

Very unusual, very tasty side dish that compliments seafood, pork and chicken beautifully. Enjoy
Ingredients:
1 teaspoon vegetable oil
1 small white onion chopped
2 cloves garlic minced
1 cup pumpkin peeled and cut into 1/2 cubes
1/4 cup sherry
1/4 cup vegetable broth
2 cups cooked black beans
1/2 teaspoon salt
1/2 teaspoon cumin
1/2 teaspoon thyme
3 green onions sliced
Directions:
1. In large nonstick frying pan heat oil.
2. Add onion, garlic and pumpkin then sauté until onion have softened.
3. If using canned pumpkin add with sherry and broth and simmer 8 minutes.
4. Add beans, salt, cumin and thyme then continue to simmer until beans are heated through.
5. Garnish with green onions.
