These bars are great for the holidays or anytime. They're nutricious and fabulous!
Ingredients:
crust
1 c. flour
1/2 c. quick cooking oats
1/2 c. packed brown sugar
1/2 c. softened unsalted butter
filling
1 15 oz. can 100% pure pumpkin
1 12 oz. can evaporated milk
1/2 c. sugar
2 lg. eggs (or substitute)
1 t. ground cinnamon
1/2 t. salt
1/2 t. ground ginger
1/4 t. ground cloves
topping
1/4 c. packed brown sugar
1/2 c. chopped pecans or walnuts
Directions:
1. Preheat oven to 350.
2. For Crust ~
3. Beat flour, oats, brown sugar & butter in small mixer until crumbly.
4. Press on to bottom of ungreased 13 x 9 baking pan.
5. Bake for 15 minutes.
6. For Filling ~
7. Beat pumpkin, milk, sugar, eggs, spices, salt in large bowl until smooth.
8. Pour over crust and bake for additional 20 minutes.
9. For Topping ~
10. Combine brown sugar & nuts in small bowl & sprinkle over filling.
11. Bake for additional 15 to 25 minutes or til knife inserted in center comes out clean.
12. Cool completely in pan on wire rack.
13. Refrigerate until ready to serve.
14. Top with whipped cream, if desired.
