Ingredients:
4 large eggs
1 cup canola oil
1 lb pumpkin
1 2/3 cup sugar
2 cups flour
2 tsp cinnamon
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
4 oz. light cream cheese
1 stick butter
1 tsp vanilla
2 cups powdered sugar
Directions:
1. Grease and flour a 10 x 13 inch cookie sheet.
2. Mix together first four ingredients.
3. Sift together flour, cinnamon, baking soda, baking powder, and salt. Blend with pumpkin mixture just until smooth. Bake at 350 degrees for 25 - 30 minutes. Let cool before frosting.
4. Mix together cream cheese, butter, vanilla, and powdered sugar. Spread on cooled pumpkin squares.
