Low-fat version of pumpkin spice bread
Ingredients:
1 cup brown sugar
1 cup white sugar
1/4 cup vegetable oil
3/4 cup unsweetened applesauce
4 eggs
1 (16 ounce) solid-pack pumpkin
1 teaspoon vanilla extract
1 cup oat bran flour
2 1/2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon allspice
Directions:
1. 1. Combine sugar, oil, applesauce, and eggs.
2. 2. Add pumpkin and vanilla extract. Mix well.
3. 3. Combine dry ingredients in a separate bowl. Add to the pumpkin mixture alternately with water.
4. 4. Pour into 2 greased 9x5x3 loaf pans or 2 muffin sheets.
5. 5. Bake 350F for 60-70 min.(loaf pans) or 25 minute (muffin pans) until bread tests done. Cool in pans for 10 minute Remove and cool on wire rack.
