Pumpkin Soup

Soup is my favorite dish during the cooler months. This Pumpkin Soup makes a delicious starter for your Thanksgiving meal.
Ingredients:
1/4 cup butter
1/2 cup onion, chopped
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cinnamon
3 cups chicken broth
2 cups pumpkin puree, canned
1 cup half-and-half
2 tablespoons brandy
salt, to taste
pepper, to taste
Directions:
1. Saute onion in butter until transparent. Blend in spices and broth. Bring to a boil.
2. Stir in pumpkin puree and half-and-half. Reduce heat and cook until soup is heated through but NOT boiling, stirring occasionally.
3. Blend in brandy.
4. Salt and pepper to taste. Serve hot.
