Ingredients:
1 large onion, minced
2 cups chicken stock
1 1/2 cups pumpkin puree
1/2 teaspoon dried oregano
1/4 teaspoon hot pepper sauce
1/4 cup toasted pumpkin seeds
Directions:
1. In a saucepan, cook the onions in 2 tablespoons of the chicken stock until limp.
2. Add the remaining stock, pumpkin, oregano and hot pepper sauce.
3. Simmer for 15 minutes.
4. Serve sprinkled with pumpkin seeds.
