This cake is festive and yummy with a smidgen of the usual fat and calories.
Ingredients:
11/2c flour
1tbs baking powder
1tsp pumpkin pie spice
1/2tsp salt
1c packed lt. brown sugar
1/3c canned pumpkin
1/4c i can't beleive it's not butter spread,melted
4 egg whites
1c(1%)low-fat milk
1 cont.(8oz) reduced-fat whipped topping thawed.
sprinkle,pumpkin candies,optional
Directions:
1. Preheat oven to 350. Coat 8 square baking pan with cooking spray.. Combine flour,baking powder,spice and salt;reserve. On med. speed,beat sugar,pumpkin and spread till smooth. Reduce speed to low;beat in egg whites until combined. Beat in flour mixture alternately with milk in three additions until combined. Pour into pan. Bake 35 to 40 mins or until toothpick inserted into center comes out clean. Cool on rack 15 mins. Remove from pan;cool completely on rack. Spread with topping. If desired ,decorate with sprinkles and pumpkin candies.
