Pumpkin Seed Spinach Salad

A sweet treat. Spinach salad with a twist. Designed for Halloween but can be modified easily to fit any occasion.
Ingredients:
salad base
8 ounces baby spinach
1/2 cup dried cranberries
1/4 cup parmesan cheese, grated
seeds & flavoring
1/2 cup pumpkin seeds
1-1/2 tablespoons sugar
1/8 teaspoon salt
1/8 teaspoon cinnamon
1/8 teaspoon cumin
1/8 teaspoon ginger
dressing
1/4 cup vegetable oil
2 tablespoons rice vinegar
2 tablespoons maple syrup
2 tablespoons mayonnaise
Directions:
1. Destem the spinach leaves. Even baby spinach has some stems that are objectionable.
2. In a large skillet toast seeds over medium heat for 2 minutes stirring often. Add sugar and seasonings. Continue to cook and stir until sugar melts, about 4 minutes See Photo. Spread on wax paper to cool.
3. In a small bowl, whisk dressing ingredients until smooth.
4. Combine the spinach, cranberries, cheese and pumpkin seeds. Serve with the dressing as a last minute topping.
