I’m on a pumpkin kick lately. These would be really good with lemon or orange flavored tea. Apple butter would be wonderful on these too. 10-12 small scones
Ingredients:
6 tablespoons butter
6 tablespoons white sugar
2 eggs, beaten
2 cups canned pumpkin
4 cups flour
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon salt
Directions:
1. Preheat oven to 400. In a mixing bowl, beat together butter, sugar, eggs and pumpkin. Stir in flour, cinnamon, nutmeg and salt.
2. Roll out to 1/2 inch. Cut into rounds and bake for 15-18 minutes. Serve warm.
