Takes a little work, but well worth the effort.
Ingredients:
3 eggs
1 cup sugar
2/3 cup pumpkin
1 teaspoon lemon juice
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons pumpkin pie spice
1 cup powdered sugar
1/4 cup butter, softened
8 ounces cream cheese
1/2 teaspoon vanilla
Directions:
1. Blend eggs on high for 5 minutes. Gradually, add sugar - beat well. Stir in pumpkin and lemon juice. Then add all dry ingredients. Bake in a greased and floured jelly roll pan at 375 degrees for 15 minutes.
2. When cake is done, turn onto a kitchen towel that has been sprinkled with powder sugar. Roll up and let cool; then unroll and spread with the filling and roll back up. Keep in refrigerator.
