Tasty, low-cal dessert. Basically a pumpkin pie without the crust!
Ingredients:
14 ounce pumpkin
1/2 cup light brown sugar
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon ground cloves
1 cup milk
1/2 cup egg whites
Directions:
1. Preheat oven to 425 degrees Bring teapot of water to a boil.
2. Whisk pumpkin, sugar and spices in a medium bowl. Set aside.
3. Whisk milk and eggs in a separate bowl. Add to pumpkin mixture and whisk until smooth.
4. Arrange eight ramekins in a shallow baking dish. Fill ramekins with pumpkin mixture.
5. Place dish in oven. Add water until it reaches the middle of the ramekins. Push the dish into the center of the oven and cook for twenty minutes. Then reduce heat to 350 degrees and cook for 30-35 minutes, or until pumpkin is set.
6. Remove ramekins from water bath and serve warm or cold.
