This recipe reminds me of thanksgiving! You could sub these squares for pumpkin pie they are so good. You'll need a 9x13-inch pan for these squares.
Ingredients:
3/4 cup all-purpose flour
3/4 cup oatmeal
1/2 cup finely chopped walnuts or 1/2 cup pecans
1/2 cup unsalted butter
1 (3 1/2 ounce) box butterscotch pudding mix (not instant)
2 large eggs
1 cup flaked coconut
1 -2 teaspoon pumpkin pie spice
1 (15 ounce) can pumpkin
1 (14 ounce) can sweetened condensed milk (not the evaporated kind)
whipped cream (to garnish)
cinnamon or pumpkin spice, for garnish
Directions:
1. Preheat oven to 350°F.
2. Mix all crust ingredients in a large bowl.
3. You may want to pulse your nuts on the food processor to get them even finer for a more uniform crust.
4. Press crust mix into an ungreased 9x13-inch pan.
5. Try to spread it as evenly as possible.
6. Beat eggs in the same bowl used for mixing the crust and mix in all remaining filling ingredients.
7. Pour over crust and bake for 35-45 minutes or until a knife inserted in the center comes out clean.
8. Cool for an hour and serve with whipped cream.
