Pumpkin Pie Pancakes

Very light, not overly spiced, and so easy. The Richards Bed and Breakfast
Ingredients:
2 cups all-purpose flour
4 teaspoons baking powder
1 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/8 teaspoon ground allspice
3/4 cup sugar
1 1/2 cups cooked pumpkin, mashed
3 eggs
1 cup milk
3/4 cup vegetable oil
1 teaspoon vanilla extract
1/2 cup pecans, chopped, optional
Directions:
1. In a medium-sized bowl, sift together the flour, baking powder, cinnamon, nutmeg, allspice, and sugar.
2. In a large bowl, beat together the pumpkin, eggs, milk, oil, and vanilla.
3. Add the dry ingredients and blend thoroughly.
4. Pour 1/4 cup batter on a hot greased griddle.
5. Cook until the bottom is lightly browned and bubbles form.
6. Turn and finish cooking on other side.
7. Serve with hot syrup.
