Pumpkin Pecan Oatmeal

Ingredients:
1 cup steel cut oats, uncooked
1 cup pumpkin (not pie filling)
1/3 cup brown sugar, firmly packed, plus
1 tbs brown sugar, firmly packed
4 oz vanilla fat free yogurt (really 1/2 cup but can't get counter to register my yogurt)
3 cups water
1 tsp pumpkin pie spice (or 1/2 tsp cinnamon, 1/4 tsp ginger, 1/8 tsp cloves, 1/8 tsp nutmeg)
1/4 tsp salt (optional)
3 tbs chopped pecans
Directions:
1. In medium saucepan, bring water, pie spice and salt to a boil; stir in oats.
2. Return to a boil; reduce heat to medium. Cook 10 to 20 minutes or until most of liquid is absorbed and it's the chewiness you like, stirring occasionally.
3. Stir in pumpkin and brown sugar; cook 1 minute.
4. Let stand until desired consistency. Spoon oatmeal into 4 bowls. Top with yogurt and pecans.
