Pumpkin Oatmeal Muffins

Very healthy and vegan breakfast
Ingredients:
1 cup oats
1 1/2 cups all-purpose flour
1/2 cup packed brown sugar
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon clove
1/2 teaspoon sea salt
1/2 teaspoon baking soda
3/4 cup rice milk
1 cup canned pumpkin
1/4 cup applesauce
Directions:
1. Blend the oats in a blender or food processor, until they are tiny crumbs.
2. In a big bowl, mix first 9 ingredients.
3. In a measuring container mix the last 3 ingredients.
4. Stir the wet mix into the dry mix until moistened.
5. Fill muffin tin and bake at 400F for 25 minutes. It is done when a toothpick inserted in the middle comes out clean.
6. This recipe makes 6 big muffins.
