PUMPKIN OATMEAL COOKIES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Baker Estate in Sachse Texas in 1987.
Ingredients:
1/3 cup vegetable oil
3/4 cup firmly packed light brown sugar
1 egg
1-1/2 cups canned pumpkin
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
1 cup rolled oats
2 teaspoons baking powder
1/2 teaspoon baking soda
1-1/2 cups flour
1/8 teaspoon ginger
1/8 teaspoon cloves
1/2 cup chopped walnuts
1/2 cup raisins
Directions:
1. In large mixing bowl beat together oil, sugar, egg and pumpkin then mix well.
2. Add cinnamon, nutmeg, ginger, cloves, nuts, raisins and salt.
3. Fold in oats, baking powder and soda then gently blend in flour.
4. Drop by tablespoons onto a nonstick cookie sheet then bake at 350 for 10 minutes.
