Pumpkin Nut Waffles

These are wonderful waffles, especially topped with maple syrup and cinnamon whipped cream.
Ingredients:
2 c flour
3 1/2 tsp baking powder
1 tsp salt
1 tsp cinnamon
1/4 tsp nutmeg
3 egg yolks
1 3/4 c milk
1/3 c vegetable oil
1/2 c canned pumpkin
3 egg whites
1/2 c chopped pecans
Directions:
1. Combine the flour, baking powder, salt, cinnamon and nutmeg.
2. In a mixing bowl beat 3 egg yolks, milk, and oil with an electric mixer until smooth.
3. Stir in the pumpkin then stir in the dry ingredients into this.
4. In another bowl beat egg whites until stiff then fold into pumpkin mixture.
5. Pour batter into preheated waffle iron and sprinkle with pecans before closing lid.
6. Bake until the iron stops steaming the serve with butter, maple syrup, and cinnamon whipped cream.
7. Makes about 8-10 waffles.
