This is such an easy recipe to put together and it's super yummy. Best of all it freezes beautifully!
Ingredients:
3 cups sugar
1/2 cup chopped pecans
1 cup oil
2 teaspoons baking soda
4 eggs
2/3 cup water
1 1/2 teaspoons salt
2 cups pumpkin
1 teaspoon nutmeg
3 1/2 cups flour
1 teaspoon cinnamon
Directions:
1. Mix sugar, oil, and eggs.
2. Add pumpkin and mix thoroughly.
3. Add dry ingredients alternately with water.
4. Add pecans.
5. Pour into greased and floured loaf pans.
6. Bake at 325 degrees F for 1 hour and 15 minutes or until toothpick comes out clean.
7. Invert immediately onto cooling rack.
8. Freezes well.
