Ingredients:

  • 1 cup pumpkin
  • 1/4 tsp. baking soda
  • 1/2 cup shortening
  • 1 1/4 cup sugar
  • 2 eggs
  • 2 1/4 cups flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 tsp. nutmeg
  • 1/2 tsp. ginger
  • 1/2 tsp. cinnamon

Directions:

  1. Heat oven to 375 F.
  2. Stir baking soda into pumpkin.
  3. Cream shortening, sugar and eggs. Mix dry ingredients and add to pumpkin mixture. Mix lightly. Fill muffin tins and bake at 375 F for 20 minutes.
