Yet another variation on my muffin recipe. Can you tell I love muffins?!
Ingredients:
2 cups bran flakes
1 1/3 cup skim milk
1 cup whole wheat flour
1 tbsp flax seed
1 tbsp baking powder
1 tbsp cinnamon
1/2 tsp salt
1 cup pumpkin, canned no salt
1/4 cup egg substitute
1/2 cup sugar
Directions:
1. Mix all ingredients together and let sit 5 minutes.
2. Divide into 24 muffin cups
3. Bake at 400 F until tops spring back when touched
