Ingredients:
1 1/2 cups whole wheat flour
3/4 cups bran
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground allspice
1/8 teaspoon ground cloves
1 cup canned pumpkin
1/2 cup soy milk
1/2 cup applesauce
3 tablespoons molasses
1/2 cup pumpkin seeds
1/2 cup raisins
Directions:
1. Mix together flour, sugar, baking powder, salt, and spices. Mix separately pumpkin, soy milk, applesauce, and molasses. Combine together wet and dry ingredients.
2. Fill muffin cups two-thirds full. Bake for 18-20 minutes at 400 deg., until a toothpick inserted comes out clean.
