My favorite pumpkin muffins, modified from a recipe in Joy of Cooking. I use homemade pumpkin puree (just bake pumpkin halves for 30-60 minutes, until the flesh can be scraped out; then puree the flesh), which really cuts down on the sugar and sodium in the final recipe.
Ingredients:
1 3/4 cups flour
2 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1/4 cup sugar
1/2 tsp salt
1 cup pumpkin
3/4 cup milk
2 tbsp butter
2 eggs
Directions:
1. mix all dry ingredients together
2. mix all wet ingredients together
3. just mix dry and wet
4. bake at 350 for 30-35 min
