Moist Pumpkin Muffins. I love this recipe because the muffins are sooooo moist. You can taste the spices and the pumpkin, but they are not overwhelmingly sweet. I got this recipe from a woman at my church. I'm addicted!! If you plan on making these regularly, buy the biggest tub of honey you can find, because this recipe uses a lot.
Ingredients:
2 eggs
3/4 cup oil
3/4 cup honey
1/4 cup maple syrup
2 cups canned pumpkin
1 tablespoon vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1 1/2 teaspoons baking powder
1 tablespoon cinnamon
1 dash nutmeg
Directions:
1. preheat over to 325 degrees.
2. beat together first six ingredients.
3. add dry ingredients and beat well.
4. drop into muffin tins.
5. bake for 18 minute.
