Moist, delicate muffin with great autumn spice flavors.
Ingredients:
2 eggs, beaten
1 1/2 cups evaporated milk
15 ounces canned pumpkin
1/2 cup oil
1 cup applesauce
3 cups flour
3/4 cup wheat germ
1 1/2 cups oats
1 cup sugar
3 tablespoons brown sugar
2 tablespoons baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
1/4 teaspoon clove
1 teaspoon salt
3 tablespoons maple syrup
1/2 cup brown sugar, packed
1 teaspoon cinnamon
2 tablespoons butter
1/2 cup walnuts, chopped
Directions:
1. 1. Mix wet ingredients well, then add dry ingredients and mix until moist.
2. 2. Fill greased muffin pans 3/4 full and pat on the topping.
3. 3. Bake at 400 for 18 - 22 minutes.
4. 4. Serve hot out of the oven with butter or cream cheese.
