Minestra with a twist. My auntie used to do this as she grew pumpkins and had to use them up
Ingredients:
2 lbs french beans
2 swede
2 small vegetable marrows
1/4 lb haricot beans
4 garlic cloves
2 tomatoes
1 lb pumpkin
2 potatoes
parsley
sweet basil (plenty)
6 ounces cheese
1 cup oil
saffron
Directions:
1. chop all vegetables and boil together.
2. when the water begins to boil add the oil.
3. pound the garlic, parsley, basil a little of the cooked vegetables, cheese and saffron.
4. add to the half cooked vegetables and cook until vegetables are tender, making sure not to over cook or burn.
5. when ready serve with spaghetti and grated cheese.
