Thiss recipe comes from the 1973 edition of the Good Housekeeping Cookbook. It is one of my favorite recipes to make. The recipe says it makes 2 loaves, but I have used it to make mini loaves and give a gifts. Oh try adding raisins, nuts, or chocolate chips.
Ingredients:
3 cups all-purpose flour
2 cups sugar
2 teaspoons baking soda
1 teaspoon ground cloves
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon double-acting baking powder
1 (10 ounce) can pumpkin (2 cups)
2/3 cup salad oil
3 eggs, slightly beaten
Directions:
1. Preheat to 350 degrees. Grease well 2 9X5 loaf pans. In large bowl, with fork, mix flour with next 7 ingredients, add remaining ingredients and mix until just blended. Turn batter into pans.
2. Bake about 1 hours or until toothpick inserted in center comes out clean. Cool in pans on wire rack 10 minutes, remove from pans and cool completely on racks. When cool, wrap each loaf and store at room temperature. (These won't be around long, they are that good!).
