A delicous healthy loaf that can be used for salad sandwiches or a sweet treat with honey or jam.
Ingredients:
600 g plain flour
1/4 cup full cream milk powder
1 teaspoon salt
30 g butter, softened
3 teaspoons dry yeast
1 cup warm water
200 g pumpkin puree
olive oil
1 egg yolk, beaten
Directions:
1. 1. Sift flour, milk powder & salt into a bowl. Add butter and mix with fingers.
2. 2. Dissolve yeast in 1/2 cup water. Add to flour mixture, mix, then add pumpkin puree. Mix.
3. 3. Mix to form a dough and need until smooth.
4. 4. Place into a lightly oiled bowl and leave for 30 minutes until it has doubled in size.
5. 5. Preheat oven to 200°C Oil a 30cm loaf tin.
6. 6. Knead the dough for a few mins, then tip into loaf tin. Leave for 30 minutes. Then brush the top with egg yolk and bake for 15 minutes Reduce heat to 180C and bake for 20 minutes.
