My grandmother called this George Washington Cake. I got the recipe originally from one of those supermarket booklets, copied it out and then have never been able to relocate the original recipe.
Ingredients:
2 1/4 cups flour
1/2 cup sugar
2/3 cup butter
3/4 cup pecans, chopped
1 1/2 teaspoons ginger
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/4 teaspoon clove
3/4 cup buttermilk
1/2 cup light molasses
1/2 cup canned pumpkin
1 egg
Directions:
1. Heat oven to 350.
2. Coombine flour and sugar.
3. using pastry blender, cut in butter until mixture resembles fine crumbs.
4. Stir in pecans.
5. Press 1 1/4 cup of crumb mixture into bottom of ungreased 9 square pan.
6. To remaining mixture add ginger and rest of ingredients.
7. Pour evenly over base.
8. Bake for 40-50 minutes.
