These little babies are addictive indeed........betcha cant eat just one hahaha..my mom used to make these for us growing up yummm courtesy of my moms church group cookbook
Ingredients:
1- 15 ounce can pumpkin
1/2- cup all purpose flour
1 egg
1/4- teaspoon salt
1-teaspoon baking powder
1-teaspoonground cinnamon
1/2- teaspoon ground allspice
1/4- teaspoon nutmeg
canola oil for frying
powdered sugar for garnish
note;....... i like to put pecans chopped in them .........i love the nuts but make them how you like them..........
Directions:
1. In a large bowl, combine all ingredients, except the oil and sugar..
2. mix just unitl blended.
3. pour the oil to a depth of about 1 inch deep into a skillet or fryer
4. test the oil for hottestby dropping small amt batter into it it should rise pretty quickly.
5. drop the batter by teaspoonfulfuls into the hot oil, being careful not to crowd the skillet.
6. after the bottoms start to brown , turn the fritters over so they brown evenly.( they cook very quickly 1-3 minutes)
7. drain well on paper towels
8. serve immed.....or can reheat in oven for about 10 minutes 400 degrees f.
9. sprinkle with powdered sugar prior to serving ............
10. or serve warm caramel dipping sauce...... yummmm
