Pumpkin Filled Blintzes

Blintzes are nothing more than crepes. I modified an existing recipe I had but decided to make more of a holiday, autumn, seasonal filling. Yes crepes are a bit of work ( not hard ) but worth the effort. Depending on the size of the pan, the crepes can be smaller and yield more servings for an appetizer. Read more . I made 8 inch crepes that yielded about 6 or 7 main dish crepes.
Ingredients:
crepe batter
3 eggs
3/4 cup flour
1 1/4 cup water( yes water not milk in this recipe )
pinch of salt
oil or butter to fry
filling
1 cup canned thick pumpkin ( or pumpkin pie filling )
2 tbs full fat cream cheese, at room temperature
1 egg
2 tbs sugar
cinnamon, or pumpkin pie spice to taste if using plain pumpkin
dash of lemon optional
Directions:
1. Make batter:
2. Hand beat or use electric mixer or electric blender to make a batter the consistency of light cream.
3. Add enough more flour if needed for the right consistency for batter
4. Let sit at room temperature about 20 minutes
5. Meanwhile make filling.
6. Combine ingredients and add sugar and spiced to taste
7. Make crepes
8. Heat a non stick pan that has been wiped with cooking oil, over medium high heat
9. Using a 2 oz ladle , ladle in batter and swirl and tilt pan quickly to cover the bottom
10. Cook till set ( this goes very quickly.) only one side
11. Turn out crepe onto a clean kitchen towel.
12. Repeat using remaining batter
13. Assemble:
14. Place a heaping Tbs of filling in middle of each crepe and spread out a bit.
15. Fold as desired: ex: burrito style, cigar style, envelope style etc.
16. I simply fold over top and bottom ends to overlap in the middle, then fold in sides and turn over.
17. These are flatter and not rolled and we like them this way
18. Finish cooking:
19. Now I usually saute the crepes in butter on both sides in a pan and then place in an oven baking pan and bake 350F till crisp, about 1/2 hour.
20. I like this extra step of baking but is not necessary.
21. Sprinkle crepes with powder sugar, cinnamon sugar and don't forget a dollop of sour cream over each crepe if desired!
22. Crepes can be reheated in the oven or microwave.
