For me, it doesn't have to be Autumn to enjoy Pumpkin. I love this loaf. This is a great recipe for teachers to prepare with their class. Then hand out samples to the children along with copies of the recipe to take home for Mommy's or Daddy's to bake. Read more . It's quick, easy and nutritious.
Ingredients:
1-3/4 cups flour
1-1/2 cups sugar
1 teaspoon baking soda
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg (i omitted the nutmeg when preparing it for the children in my classes)
1/2 cup oil
1/3 cup water
2 eggs
1/2 teaspoon vanilla
1 cup pumpkin (canned version is best)
Directions:
1. Sift together all the dry ingredients into a bowl.
2. Mix together all the wet ingredients (oil, water, eggs, vanilla, and pumpkin).
3. Stir wet ingredients into the flour.
4. Bake in greased loaf pan for 1 hour at 350 degrees F.
5. Note: I had at least 34 students and we made 3 loaves so that everyone could get a decent sized piece. The children were enthusiastic and the parents appreciative.
