These pumpkin bars are a great alternative to pie, when serving a large group. Ingredients:
2 cups sugar |
1/2 cup vegetable oil |
1 (16 ounce) can pumpkin |
4 eggs |
2 cups baking mix (bisquick) |
2 teaspoons cinnamon |
1/2 cup raisins |
3 ounces cream cheese |
1/4 cup butter |
1 teaspoon vanilla |
3 cups confectioners' sugar |
Directions:
1. In a large bowl combine sugar, vegetable oil, pumpkin and eggs. Beat for 1 minute. Add baking mix, cinnamon and raisins. Spread in greased, 15x10x1 inch jelly roll pan. Bake at 350, for 25 minutes. 2. Frosting: Beat cream cheese, butter and vanilla until fluffy. Gradually add confectioners sugar. Spread over cooled bars. |
