Pumpkin Creme Fraiche Bisque

On my friends farm, in their barn, we are doing a pumpkin theme party. They grow thousand of pumpkins. Pumpkin ravioli, Deep-fried Turkey, Pumpkin Stuffing, Pumpkin mashed potatoes and my Pumpkin Bisque
Ingredients:
1 whole pumpkin (seeded, roasted, skinned and cubed) or 8 cans of puree
1/2 stick of butter
3 yams (peeled, cubed and roasted)
1 yellow onion sliced
1/4 c. brown sugar
2 tbs. nutmeg
2 tbs. cinnamon
1 gal. chicken stock or broth
1 c. dry sherry
1/2 gal. heavy cream
salt and pepper to taste
creme fraiche, red pepper, chives
autumn cocktails
Directions:
1. Saute the onion in the butter until soft
2. Add the pumpkin and yams continue cooking for 5 minutes
3. Add the dry ingredients and cook 5 more minutes
4. Add chicken stock and bring to boil; turn down to a medium cook 30 minutes
5. Puree the soup when it can be handled and return to pot
6. Add the Sherry
7. Add the heavy cream and continue to slowly cook
8. Add salt and pepper
9. To serve: Ladle into small soup bowls and garnish with creme fraiche
10. Sprinkle some ground red pepper flakes and minced chive.
11. Because this is our annual pumpkin themed party, all foods have pumpkin in them. The Stuffing to go with the turkey has pumpkin in it, as do the mashed potatoes, Squaw bread, pumpkin-honey butter. The ravioli is deep fried and served with sides of Alfredo sauce ever so flavored. We buy two sheet pizzas for our local yokel friends who won't eat half of this stuff. Everyone has to have my Autumn Cocktail!!!!
