Pumpkin Cookies With Maple Icing

Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Mix together flour, salt, baking soda, baking powder, cinnamon, ginger, and nutmet
  3. In separate bowl, mix together oil and sugars
  4. Add pumpkin to oil/sugar mixture and blend well
  5. Add in eggs and vanilla to pumpkin, and mix
  6. Slowly add in flour mixture to wet mixture
  7. Place tablespoonfuls of mixture on baking sheet
  8. Bake 10-12 minutes
  9. Meanwhile, mix butter until smooth
  10. Add cream cheese to butter and mix well
  11. Add in powdered sugar, syrup and vanilla and blend until creamy
  12. My frosting was thin and glaze-like so i drizzled over top/dipped cookies in it
  13. If frosting is thicker, this recipe works well to stick two cookies together to create a whoopie pie
