Hungry Girl Veggie Pumpkin Chili, with extra veggies and added butternut squash and chicken breast. double recipe
Ingredients:
30 oz pumpkin
30 oz beans black
30 oz kidney beans dark red
15 oz chili beans
2 cup, chopped squash, summer, zucchini, includes skin
3 cup, sliced squash, summer, all varieties
6 cup chopped raw baby bella mushrooms packaged
2 cup, chopped onions
15 oz mild diced tomatoes and green chilies
15 oz petite cut diced tomatoes
7 oz green chilies
23 oz squash, winter, butternut
15 oz natural goodness chicken broth
30 oz unico whole tomatoes - no salt added
47 oz chicken, breast, meat only
8 grams sea salt
Directions:
1. Mix all ingredients, add roughly 2 Tbsp. ea. chili powder, minced garlic, and ground cumin and salt, plus 1.5 Tbsp. ea. pumpkin pie spice and cayene pepper and stew for 3-4 hours.
