A different take on the pumpkin cheesecake
Ingredients:
1 pie shell, premade
1 cup low fat cottage cheese
4 ounces neufchatel cheese
1/2 cup sugar
1/2 cup canned pumpkin puree
3 tablespoons flour
1 teaspoon vanilla
1 teaspoon pumpkin pie spice
2 eggs
Directions:
1. Preheat oven to 325°F
2. Puree ingredients, except eggs, until smooth. Pour into a large bowl. Slightly beat eggs and gently fold into mixture. Pour mixture into pie crust and bake 50 minutes or until center is firm.
