Here's a great recipe to use some of the pumkins you bought for Halloween.
Ingredients:
1 cup canned solid-pack pumpkin
1 cup shredded carrot
1/2 cup sugar
1/3 cup dried cranberries or raisins, chopped
1/4 cup canola oil
2 large eggs add to
1 cup whole grain pastry flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 cup shelled pumpkin seeds or chopped walnuts
Directions:
1. Preheat the oven to 350°F. Coat a 13 x 9 x 2 baking pan with cooking spray.
2. In a large bowl, combine the pumpkin, carrot, sugar, cranberries or raisins, oil, and eggs. Stir untilwell blended. Add the flour, baking powder, cinnamon, baking soda, and salt. Mix until blended.
3. Pour the batter into prepared panand spread evenly. Sprinklewith pumpkin seeds or walnuts.
4. Bake and then cool completely.
