Lo-cal pumpkin butter I don't think we are allowed to promote stuff so if you want the link to the author's blog(she has many more low-cal recipes) message me. She's fond of artificial sweeteners. I used real brown sugar because Whey Low Gold is too expensive for me.
Ingredients:
1 lb pure pumpkin
1 tsp pumpkin pie spice
1 tsp lemon juice
2/3 cup splenda no calorie sweetener
1/4 cup dark brown sugar
Directions:
1. Mix ingredients in a medium sauce pan.
2. Bring to a boil on medium-high heat, while stirring frequently.
3. Reduce heat to low, stirring frequently(at least every 5 minutes) until mixture becomes dark and thick(1 hour).
4. Let cool and store in an airtight container.
5. Enjoy it on toast, mixed into yogurt, blended into your vanilla protein shake! Tastes like pie!
6. If my math is correct, one serving should be around 2 tbsp.
