Low fat, high fiber version of Mom's pumpkin bread, yummy!
Ingredients:
3 1/2 cups whole wheat flour
2 teaspoons baking soda
1 1/2 teaspoons salt
2 cups sugar
1 cup water
1 cup egg beaters
2 cups canned pumpkin
1 cup unsweetened applesauce
1 t cloves
1 t allspice
1 t nutmeg
1/2 t ground ginger
2 t cinnamon
Directions:
1. Preheat oven to 350 F
2. Spray two standard loaf pans with nonstick cooking spray.
3. Mix all dry, then all wet ingredients. Mix until well combined.
4. Bake at 350 F for about an hour
5. Makes 2 standard loaves of pumpkin bread
