Good as a breakfast item with an all natural fruit jam! Make it fat free if you find the nonfat buttermilk instead of lowfat.
Ingredients:
1 cup whole wheat flour
1 cup unbleached flour
2 tbsp sugar
1/2 cup pumpkin
1 cup lowfat buttermilk
1 tsp baking soda
Directions:
1. Blend flours, sugar, and baking soda in bowl. Add pumpkin and buttermilk and mix until dry ingredients are just moistened. Drop spoonfuls of batter on cookie sheet that has been sprayed with nonstick spray. Bake for 12 to 15 minutes at 325.
