PUMPERNICKEL AND WHITE CHEDDAR COCKTAIL SANDWICHES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pittman Estate in Hurst, Texas in 1993.
Ingredients:
1/4 cup mayonnaise
1 teaspoon dijon mustard
1/4 teaspoon paprika
1 loaf party pumpernickel bread
1 pound white cheddar cheese grated
2 baby whole dill pickles minced
Directions:
1. Heat broiler then combine mayonnaise, mustard and paprika in a small mixing bowl.
2. Spread mayonnaise mixture on one side of each bread slice.
3. Place bread slices on a baking sheet then sprinkle with grated cheese.
4. Broil until cheese melts about 1 minute then remove from oven.
5. Top half of the bread slices with pickles then top with remaining slices and press down.
6. Cut in half and serve warm.
