Puffy French Toast

For those mornings when you just can't decide if you want French toast or pancakes, this recipe combines them both. Ok, so it's not so high on the healthy scale , but it's fun once in awhile...this was my youngest daughter's request whenever she had a friend sleep over.
Ingredients:
1 cup milk
2 eggs
11/2 cups pancake mix
enough shortening or oil for pan frying (about 1/4 cup)
8 day-old slices of bread (i use french bread, cut about 3/4 thick)
Directions:
1. Mix together milk, eggs and pancake mix.
2. Heat shortening or oil in a skillet until hot (375 degrees).
3. If using regular bread slice, cut each slice in half diagonally. This is not necessary if you use French bread slices.
4. Dip each slice into the batter and place in hot skillet.
5. Sauté bread slices until golden brown and puffy, about 2 minutes per side.
6. Watch closely, as they can burn easily.
7. Drain well on paper toweling.
8. Serve with powdered sugar sprinkled on top, or with syrup or jam.
