I found this when I had just gotten my Aebelskiver pan.
Ingredients:
4 1/2 ounces wheat flour
4 1/2 ounces buchwheat flour
10 ounces milk, lukewarm
1 egg
1/3 ounce yeast
2 tablespoons syrup, sweet
1 pinch salt
2 1/2 ounces melted butter
powdered sugar
Directions:
1. Mix the flour. Make a depression in the middle and pour a small portion of the warm milk in which the yeast has been dissolved, into the hole.
2. Sprinkle the salt along the outer edge of the flour and start making the pffertjes mix, stirring from the center adding slowly the remaining milk and then the beaten egg and syrup.
3. Leave mix to rise for about 45 minutes in a warm place.
4. Put some butter in each hole then pour some mix into each hole about half full. Let the bottom brown and turn to cook the other side.
5. Serve as hot as possible.
6. Sprinkle with powdered sugar and put butter on each.
