I found this recipe in my collection. Although I've had it for along time, I've never made it but I love pistachio and thought I would give it a try. The prep time was hard to calculate because the first layer needs to be frozen.
Ingredients:
1 stick margarine
1 cup chopped walnuts
8 oz softened cream cheese
1 cup confectioners sugar
12 oz cool whip
1 pkg instant vanilla pudding
1 pkg instant pistachio pudding
3 cups milk
Directions:
1. First layer:
2. Melt stick of margarine in a 13x9 pan.
3. Add 3/4 of the walnuts (reserve a quarter for the topping) and bake at 350 degrees for 15 minutes.
4. Freeze until firm
5. Second layer:
6. Combine cream cheese, confectioners sugar and 1/2 of the Cool Whip. Beat together and spread on crust.
7. Third layer:
8. Beat together the vanilla and pistachio pudding with the milk until thickened. Spread over second layer.
9. Fourth layer:
10. Top with the remaining Cool Whip and walnuts.
