Ingredients:

Directions:

  1. Put potatoes in a large saucepan and cover with cold water and bring to a boil.
  2. Reduce heat to med and cook until potatoes are very tender when stabbed with a fork, about 15 minutes.
  3. Drain well.
  4. Return to the saucepan and add the cream and butter. With a hand mixer, blend until just smooth (do not over whip).
  5. Add the olives and thyme. Garnish with fresh thyme.
  6. Season generously with salt and pepper.
  7. According to Oprah this serves 12 to 15.
