Provençal Sprouted Bean Salad

Ingredients:
1 cup truroots sprouted bean trio
1 small red bell pepper, peeled, seeded and finely diced
1/2 finely diced red onion (or shallot), chopped
1/4 cup chopped fresh flat-leaf parsley
1 teaspoon chopped fresh sage
2 tablespoons extra virgin olive oil
2 tablespoons white wine vinegar
fresh lemon juice, to taste
sea salt, ground black pepper and sugar, to taste
Directions:
1. Cook beans according to package directions. Drain well.
2. Combine warm beans, bell pepper, red onion, herbs, oil, vinegar, menon juice and seasonings in a medium bowl. Toss well. Cool to room temperature before serving.
